~Beef Pho~ Ingredients: 8 oz. of rice noodles 12 oz of beef - thinly sliced salt/pepper 2 tbls oil 1 onion quartered 1 4 inch piece of garlic, peeled 3 cups of low sodium beef broth 3 cups of water 5 star anise pods (dont use seeds it doesnt come out right) 1 cinnamon stick 4 scallions sliced thin 2 jalapeno peppers sliced thin - seed removed if you want less heat 2 3 oz. cans of straw mushrooms 1/2 cup fresh cilantro 2-4 tablespoons of fish sauce (I used 3) 1 cup of steamed brocoli (or bean sprouts, I couldnt find any) Directions: Prepare rice noodles according to package directions - drain. For broth: In a large pot heat oil, saute onion, ginger until soft. Add broth, water the star anise and cinnamon. Bring to a boil then reduce heat to a simmer for 20 min. Meanwhile in a seperate pan sear the beef in a bit of oil. Add fish sauce simmer for an additional 5 min. Drain broth to remove onion, star anise, cinnamon stick and ginger.
