✨GINGERBREAD PROTEIN MUFFINS✨ Oats and gingerbread spices make the most delicious muffins! I actually gave these to a friend of mine and he didnt believe me when I told him theyre healthy. Thats right - no added sugar, low fat, gluten free... And they make your house smell amazing... Makes 10 2 scoops Giant Sports Delicious vanilla protein powder 1 cup oat flour 1 cup almond meal 1 tsp baking powder 1 tsp ground ginger ½ tsp cinnamon ¼ tsp all spice ½ tsp salt ½ cup Natvia for baking ½ cup egg whites ½ cup unsweetened apple sauce 1 tsp vanilla extract 2/3 cup unsweetened vanilla almond milk 1.In a large mixing bowl, whisk the egg whites until they form stiff peaks. 2.Combine Natvia, apple sauce and vanilla extract and blend until smooth. 3.In a separate bowl combine protein powder, oat flour, almond meal and baking powder. 4.Add half the dry mix and half the almond milk to the wet mix and blend until smooth. Repeat with remaining ingredients. 5.Pour mixture into greased muffin tray (Tip: I find using silicon cupcake molds works best!). Top with a sprinkle of cinnamon. 6.Bake in the oven at 170 degrees C for 30-40 mins or until a skewer inserted comes out clean. 7.Sprinkle a little Natvia over the top of each muffin to serve.
