(GLUTEN FREE/DAIRY FREE RECIPE) Lemon Rosemary Pork with Potatoes & Veg 2 Tbsp. fresh rosemary leaves or 1 Tbsp.dried rosemary leaves 1 Tbsp. crushed garlic 3/4 tsp. salt or, more to taste 1/2 tsp. ground black pepper 2 1/2 lb. boneless pork loin roast 1 tsp. quick-cooking tapioca (available from most supermarkets) 1 shallot, thinly sliced 3 large potatoes, quartered lengthwise 2 Tbsp. olive oil 1/2 cup dry white wine 1 lemon, sliced Method Create a rub with rosemary, garlic, salt, and pepper in a small bowl. Rub the spice mixture all over the pork roast then it set aside. Sprinkle the tapioca into the bottom of the slow cooker then add the shallots and potatoes. Add butter or olive oil and then wine, then place the pork on top. Top the potatoes and pork with lemon slices. Cover and cook 8 hours on LOW (or 4 hours on HIGH). Then squeeze the access juice from the lemons with a fork and then remove them. Serve with veg... yummy!! x
