{Hidden Sources of Gluten} Gluten can be a sneaky trickster. Not only do symptoms of gluten sensitivity mimic and overlap a dazzling array of symptoms caused by other things, too (belly pain, gas, bloating, joint pain, fatigue, anemia, anxiety, itchiness, rash, headache to name a few…) BUT gluten can be lurking in many different foods and items, so its important to know what to look for. First, know your grains. Grains that contain gluten are wheat, barley, rye…but also spelt, semolina, farina, cous cous,graham, kamut, bulgur, matzo, orzo and everything that is made with these flours. Flour works its way into many items, including crab cakes, marinades, dressings, seasoning rubs and panko. When you are buying pre-packaged items from a store, always read the label! Even something as innocuous as soy sauce contains gluten! We live in an age where most things are heavily processed and most packaged foods come from multiple different sources and may be harboring ingredients you do not expect. Thus, check your labels on these commercially prepared foods: hot dogs and deli meats (AppleGate Farms is GF, and my favorite!), beer, blue cheese, baked beans, pre-breaded veggies or meats, including french fries, bouillon, chocolate milk, communion wafers, meatballs/meatloaf, egg substitute, protein bars, malt/malt flavor, teriyaki sauce, veggie burgers and wheatgrass. This is NOT a comprehensive list, but just to give you an idea. Also, your soap, shampoo, lipstick, lip balm, body lotion and so forth can also contain gluten. Look for hydrolyzed plant protein, wheat germ, wheat germ oil…these are all code for contains gluten. Happy label-reading, loves … #glutenfree #glutenfreelifestyle
