**MAKING MEALS- CALABACITAS (a Spanish veggie side dish)** We grew up eating this and still to this day make it consistently. It’s a great side dish especially with Mexican food or whenever you just want to get some extra veggies in! Not to mention its sooo easy to make! • 4 zucchini: .98cents/lb. @SP • 4 yellow squash: .98cents/lb. @SP • 4-5 roma tomatoes: .33cents/lb. @FC **07/26 & 07/27 only** • ½ yellow or white onion: .48cents/lb. @ SP • 1 can or frozen bag of corn SP= Sprouts, prices valid through 07/30 In a large pot, put a few pats of butter in on medium heat (doesn’t have to be much, just enough to coat the bottom of the pan really). Cube your zucchini and squash and dice your tomatoes and onions. Throw them all into the pot together, put the lid on and leave for about 10-12 minutes. At that point, check for tenderness (we prefer ours kind of mushy) and then add your can or bag of corn, let cook for another 3-5 minutes or until corn is heated through. If a lot of liquid has come from the veggies, strain or pour out some of the excess liquid. Add some garlic, salt and pepper. You can serve this side dish just as is or add some shredded yellow cheese and mix in. Either way it’s delicious, healthy and super easy! Enjoy!
