{Quick Tip for moms on the Go} Buy fresh veggies but you dont use all of them and the rest goes bad? Dont want to buy broccoli, cauliflower and two kinds of carrots? Another option is a frozen mixed bag. Frozen veggies are picked at the peak of freshness and flash frozen at a very high temperature and maintain their color and flavor easily. They can be used for so many things. I usually roast them and it takes me no time at all to get it prepared. To save time put your frozen portion in the fridge in a dish to throw on a plate when you get home. Dont worry about covering the dish---we want that moisture to evaporate. It would get mushy in a bag. Directions: Preheat oven to 400 degrees. Place in one layer on a sheet pan. Use a paper towel to make sure veggies are somewhat dried off. Season with drizzled olive oil, salt, pepper and roast on upper middle rack for 20-25 min flipping over halfway. I served over brown rice and some leftover cut up turkey with a homemade teriyaki sauce. Delish!
