****Recipe of the week**** Caths Coconut Curry Chook This is so so so easy and delish. You can adjust recipe and use your slow cooker and cook for 4hrs on high or 8 on low. In a saucepan melt 2Tbsp butter, stir in 2 Tbsp curry powder and 1 can coconut milk, keep warm. In a frypan brown 1 cup sliced onions, 1kg thigh fillets diced, 5 garlic cloves. Add coconut mixture, cover and simmer 20mins till cooked through. Add peas & corn at the end then serve on rice - DIVINE! Not spicy at all so add more curry powder if desired.
