‘Round and About Hunt County A publication of the Family and Consumer Sciences program of Texas A&M AgriLife Extension-Hunt County DINNER TONIGHT HEALTHY COOKING SCHOOL is shaping up to be a great event! Planning for Dinner Tonight has been going on for several months, and we are now taking registrations! The Healthy Cooking School will be Tuesday, October 15 at Fletcher Warren Civic Center from 6:00 - 8:00 p.m. Doors will open at 5:30 p.m. and you can visit our vendors, which will include Brookshire’s and Just Pie, just to name a few! Two complete menus with ease of preparation, nutrition and economy being emphasized by County Extension Agents. Door prizes, goodie bags, and more are on the agenda! LOOKING FORWARD TO A GREAT Friend to Friend event in Lone Oak this coming Saturday, September 14. The “party” will begin with registration at 9:30 a.m. and a complimentary brunch at 10:00 a.m. We’ll have door prizes, goody bags, and a great inspirational speaker. What is a Friend to Friend party? We want to get the message out to women how important early screening for breast and cervical cancer is....it saves lives! There is no charge to attend the party, come and bring a friend. To preregister, please call 903-455-9885. CALLING ALL YOUNG COOKS for the 4H Recipe Challenge! You do not have to be a 4H member to participate, so pay close attention! This is a short term project with only three meetings: September 26, October 10, and October 24. We will meet at the County Extension Office at 6:00 p.m. What do you do? For kids enrolled, we will send you a recipe for each meeting. You will prepare it at home, and bring to the Extension Office to present to our “celebrity judges” panel. They will taste your food and give you feedback on preparation and presentation. You will also have the opportunity to taste other members’ foods and discuss their foods with them. Sound like fun? Shannon Foltz, owner of “Just Pie” in West Tawakoni will be our guest presenter and is bringing some of her favorite “Soup’s On!” recipes to share with you. You’re gonna love it! Registration for the series is $45, and includes the three-part series on September 10, October 8, and November 12. Class begins at 6:00 p.m. with a snack supper, demonstration starts at 6:15, and we are finished about 7:30 p.m. You get to sample foods demonstrated, and take home a copy of all recipes . You might even win a door prize. To register call 903-455-9885. CHICKEN AND DUMPLIN’S HAVE BEEN on my mind today. Are you ready for some comfort food? This is my Mother’s recipe, in her words from how her mother taught her to make chicken and dumplin’s. I make mine the same way, and of course I think they are the BEST! I know many people use biscuits or flour tortillas to make dumplings, and they will do in a pinch, but I love the old fashioned way using pastry. Just follow directions....even a beginner can do it. Oh, for your information and ease, you don’t have to clean your own chicken! MAMA’S CHICKEN AND DUMPLINGS Clean thoroughly (and Mama meant thoroughly) one 3 pound or larger fryer. With skin intact, cover with water in a large stewpot and boil, with salt and pepper until done. Remove from heat. Cool until skin and bones can be removed easily. Put meat pieces back in liquid and reheat to simmering stage. Mix and blend 1-1/2 cups all purpose flour, 1 teaspoon salt and ½ cup vegetable shortening. Add about 1/4 to 1/3 cup hot chicken stock to make dough. Roll out to about 1/8 inch thickness on floured cloth or board. Cut into pieces about 2 inches long by 1 inch wide. Heat up chicken stock until it is boiling. Drop one by one, the pieces of dough. Be certain each piece is covered with liquid before adding another. When all dough is in pot, cover and simmer stirring occasionally for 45 minutes to 1 hour. BICYCLE RODEO SPONSORED BY HUNT COUNTY YOUTH ALLIANCE will be on Saturday, September 21 from 9 a.m. until 12 a.m. Location will be the Boys and Girls Club at Reecy Davis Center in Greenville. It is free for children ages 4-15. Children must bring their own bicycle if possible and protective gear. Children with no helmets will be provided one compliments of partners of the Youth Alliance. We have registration information in the County Extension Office if you know of children who want to participate. It’s FREE and will be loads of fun! INFORMATION ON THE NEW TEXAS COTTAGE FOOD LAW is available from the Extension Office. If you need details on this, please shoot me an email and I will send you the info.
