***Whats Cooking Wednesday*** Who doesnt love a good Tater recipe? Especially at this time of year! Here are some you may want to make a Thanksgiving tradition. ~ Mama G Buttermilk Mashed Potatoes Makes: 6-8 Servings Hands-on time: 25 Min. 1. Peel 4 lb baking potatoes. Cut into 2 inch pieces. Bring potatoes, 2 teaspoons salt and water to cover to a boil over medium-low heat. Boil 20 minutes or until tender. Drain. Return to low heat and cook another 3-5 min, stirring occasionally. Until potatoes are dry. 2. Mash potatoes with a masher to desired consistency. Stir in 3/4 cup warm buttermilk, 1/2 warm milk, 1/4 cup melted butter, 1/2 teaspoon pepper and 1 teaspoon salt, stirring until just blended. Heres where the fun comes in. There are 5 (yes Five) tasty additions to make it belong to you! Prepare potatoes as above increasing buttermilk to 1 1/4 cups and add in one of these: 1. Smokey Sweet Potato: 1 Cup mashed baked sweet potatoes and 1 1/2 tablespoon chopped canned chipotle peppers in adobo sauce. 2. Creamy Spinach: 1 5 oz pkg. fresh baby spinach, cooked until wilted. 1 5oz pkg. buttery garlic and herb spreadable cheese and 1/4 cup chopped toasted pecans. 3.Carmelized Onions: 1 1/4 cups freshly grated Gruyere Cheese, 1 cup chopped caramelized onions and 2 tablespoons chopped fresh parsley. 4. Bacon & Blue: 1 4oz wedge of blue cheese, crumbled and 8 cooked and crumbles bacon slices. 5. Tasty Tex-Mex: 1 4.5oz can chopped green chilies, 1 1/4 cups (5 oz) shredded pepper jack cheese, and 1/2 cup finely chopped cooked chorizo sausage.
