**台湾肉圓 (Ròu yuán)** Ingredients For the dough: 面团 1 cup of water for 1 cup of rice flour 一杯水一杯粘米粉 1.25 cups of water for 1.5 cups of sweet potato flour salt and pepper 1.25杯的水加入1.5 杯的薯粉+少许的盐和胡椒粉 --- For the meatballs: 肉馅 0.5 lb ground pork or minced pork 猪肉 1 large boiled bamboo shoot 竹荀 3 shiitake mushrooms 菇 1 tsp of white pepper 白胡椒粉 1 tbsp of soy sauce 酱油 2 shallots 小葱头 1 tsp of 5 spice powder 辣椒粉 Chinese parsley as garnish --- For the sauce: 1 tbsp of mirin 味精 1 tbsp of ketchup 茄汁 2 tbsp of sweet chili sauce 甜辣椒酱 1 tbsp of chili bean sauce 辣椒豆瓣酱 Instructions 1. Mix 1 cup of water with 1 cup of rice flour in a pot. Cook over medium-low heat and stir until the dough becomes sticky. 2. Turn the heat off. Mix 1.25 cups of water with 1.5 cups of sweet potato flour. Pour this mixture into the pot, turn the heat back on low and mix until you get a uniform dough texture. Season with salt and pepper. 3. Chop the bamboo shoots, shiitake mushrooms, and shallots into fine pieces. 4. Put ground pork on a plate and flatten it. Put the bamboo shoots, mushrooms, shallots, white pepper, soy sauce, and 5 spice powder on top of the pork. Mix thoroughly. 5. Take a small shallow dish and cover it with thin layer of the dough. 6. Next, put a small ball of the meatball mix in the middle. 7. Then, cover the meatball mix with more dough so that you cannot see the meatball anymore. Be careful not to put too much dough or your meatball will not cook correctly. 8. Put water in your steamer and bring it up to a boil. Place the meatball dish in the steamer and let it cook for about 13-15 minutes. 9. Now, we can make the sauce. Combine mirin, ketchup, sweet chili sauce, and chili bean sauce in a bowl. Mix well. 10. After 13-15 minutes, take the meatball dish out of the steamer and serve with the sauce. Make sure the dough is translucent! Garnish with Chinese parsley. 11. Enjoy!
