1-2-3 cookie crust for the GF people in your life: 1 stick melted butter, 2 cups GF cookie or graham cracker crumbs, and 1/3 c. sugar. Pick whatever kind of storebought GF cookies you want, put them in a zipper bag and crush them with a rolling pin. Mix all 3 ingredients with a fork, then press onto sides and bottom of pie pan. Stick it in the freezer for 20 minutes and then fill/bake as usual. We used shortbread cookies and put a pumpkin pie filling in. It was the best pie on the table.
