10 things that drive me crazy when making macarons: 1. When you do not mix your meringue and dry mix enough, under mix, and you get little dillies on the top. (Picture) 2. It difficult to find a happy medium when mixing and sometimes over mixing can completely ruin you batch and pancake to much out which leads me to my next macarons pet peeve... 3. When your macaron is way to BIG! Or way to small. This goes along with mixing if you over mix the macaron ends up being bigger than you want. When macarons are too small that is based on your own poor judgment! 4. When your macaron just does not wanna come if your silicone mat or wax paper. I dont know personally why it does that but I am sure there is an explanation.(picture) 5. When you under bake the macaron just a bit. Yes, the color does look great and there is no browning in the top but, when you go to put your filling in it likes to just collapse inward and not push he filling outward like it should (picture) 6. This is just a personal peeve. When putting jam in as your filling the acidic acid tends to eat away at you macaron and looks weird to me. I personally do not like what is does but it still tastes amazing. 7. When you basically made a meringue instead of a macaron. I believe this goes with under mixing your macaron will have no gooey center like it should and it just cranes and breaks super easy. Usually due to over baking and/or under mixing. 8. When you break a macaron :( (Picture) 9. When the color just is not right! and it is to late to add more or else you will over mix! Its upsetting but chances are its close enough. 10. Over baking, when you over bake a macaron if ends up browning and ruining your color around the edges so always bake at a low temp. And with some sort of ventilation.
