1990s & 2000s + maturing> 3 months mild, 4 to 6 months medium, 7 to 10 months tasty, 11 to 15 months vintage. farmhouse no longer than 18 months for todays cheese tastes. 1980s cheese maturing> 6 to 12 months mild with firm dry milky gorgeous texture with a line of mild strength, 13 months to 2 years a medium line of strength with delicious flavour throughout the cheese. 2 to 3 years is tasty with a line of strength & firm tasty bite with a slight burn to the throat. 3 to 4 years vintage strength is a firm powerful line of cheese that will burn the throat of delicious strength. 4 years plus is farmhouse the very strong stuff with a deep powerful burning taste & sometimes bad smell.
