2:30 am on Maui and just finished so Kim Chee. Lighting, thunder, & rain outside from Hurricane Ana, passing just west of the islands. Learned my lesson, and used tall 1/2 gallon mason jars, leaving plenty of space at the top of the jars. I used quart jars the first time I made Kim chee, and filled the jars too high. On the 2nd day of my 1st Kim Chee fermentation, the jars were over flowing, haha... Used; 2 Napa cabbages, 3 mustard cabbages, 1 bunch of watercress, daikon, carrots, green onions, Italian parsley, Thai basil, Genoese basil, Lilikoi, Korean chili flakes, Briggs amino acid, Briggs Apple cider vinager, salt, & sugar.
