30 MINUTE PALAK PANEER For a working mom, every minute counts. But what counts more than this precious commodity, time, is the smile on her childs face. Every now and then when I get irate with my cooks truancy I see this smile appear on my 10 year olds face and it takes all the irritation away!! INGREDIENTS 2 bunch Spinach (small leaves one is best) 2 large bunch coriander (quantity equal to the spinach) 500 gms Paneer - diced in 1/2 inch cubes 2-3 green chillies For seasoning 1 tsp ginger paste 1 tsp garlic paste 1 tsp whole cumin 1 tsp coriander powder 1 tsp red chili powder 1/2 tsp turmeric powder 1/2 tsp ajwain powder (carom seeds) 1/2 tsp cumin powder Pinch of asafoetida 1/2 cup fresh cream COOKING : Bring water to a boil. Put the spinach and bring it to a boil & remove immediately. Keep a bowl full of cold water & put the blanched spinach in to stop the cooking. This keeps the colour a vibrant green Grind the coriander & blanched spinach together with the green chillies. Pour 2 tsp oil in a pan. Add ginger garlic paste and asafoetida and sauté for 1/2 a minute. Put in the rest of the spices. Fry for a minute. Add the spinach mixture in and bring to a boil. Add salt and add paneer pieces. Stir lightly. Remove off the flame. Let it cool down and add fresh cream & mix lightly !! Ready to eat !!
