30 Reasons why I love my country Series #20 - Our Healthy Home-cooked Meals I Bertha Riley love my local St Kitts-Nevis food. I am not into no foreign foods business with anybody. No noodles and tin soup for me. When I cook is pure St Kitts food in my pot and it keep my stomach heavy for long and my pressure don’t go up. So this is edition I share my traditional St Kitts menu for the week. Real St Kitts food - for your strength and enjoyment. Sunday : Rice and Red peas cook with a little seasoning – herbs, thymes, onion and pepper. Baked Chicken in Gravy (seasoning, with a little tomato paste sauce down. Boil or bake sweet potato. Coleslaw, lettuce, tomato and cucumber. Monday: Mash green fig/mash breadfruit with stew chicken. Just boil the green fig and mash it with a little butter and milk if you want. Stew your chicken with a lot of seasoning and you could add curry for flavour. Tuesday : Do down Saltfish and Coconut Dumplings with sweet potato, slices of carrots and pieces of yam and breadfruit on the side. Make sure you soak out the saltfish before and take out the bones to get rid of the salt. Wednesday: Soup: Every vegetable you could find in you fridge you throw in a big pot to boil with a whole lot of seasoning and some chicken neck, red peas and piece of mutton. Use a big spoon to eat and make sure you pull up (ssssst) when you eating. Thursday: Corn and Fish. Put the cornmeal to boil with some ochro and make sure it don’t get too soft like mine last week or else you will get pap and you will have to drink it from a cup- instead of eating in from a plate - while eat your fish.Lat week I had to drink my corn and eat my fish. So turn it with a wooden spoon to make sure it smooth and firm. Then form some medium size balls and you ready to go. Steam you fish with a lot of thyme and sweet pepper and some salt. Get a big spoon and eat to your heart content. Friday: Rice and Lentils with chicken cook- up in one pot with a lot of local seasoning. No sazon. Saturday: Belly Soup or goat water. Eat to your belly content. For breakfast boil a stick of chocolate with some milk with bread and relish. Or you could get you bush tea that could cure everything with bread and egg or any relish you want. Eat local and stay strong!
