ESCOVEITCHED FISH SALAD; Lightly fried fish fillets on a bed of salad with a spicy dressing. ** CARIBBEAN BUFFET JAMAICAN CURRIED GOAT (well lamb really); A hot curry with scotch bonnet chillies, garlic, all spice, peppers, thyme, roasted spices and lime juice. CHICKEN RUNDOWN; A medium chicken dish, in a coconut cream sauce, with chillies, thyme, allspice and spring onions. FISH STEW; Fish fillets in a tomato and coconut cream sauce, with spring onions peppers and parsley. ITAL CURRY; Based on a Rastafarian recipe, a mixed vegetable curry with squash, aubergine, cabbage, carrots, beans, plantain, allspice, peppers and thyme in a coconut cream sauce. SWEETER THAN SWEET POTATO BAKE; Sweet potato with pineapple, ginger, cinnamon and rum. ** MANGO TART; Caramelised mango pieces on a puff pastry base. AMBROSIA; Tropical fruit salad with coconut, maraschino cherries and laced with white rum.
