A bit of crude scienceing tells me that a granite countertop should be at least as good as marble in heat conduction, possibly 35% better (not sure which varieties they make countertops from - some may even perform worse), almost as good heat capacity (780 vs 880 J/kg, IIRC) and most importantly many many times harder, being extremely difficult to scratch, unlike the soft marble which could probably be scratched with an unusually hard fingernail. Not as stylish though, I guess.
