A couple of weeks ago I made this huge pan of vegetable lasagna that contained carrots, green & yellow peppers, portabella mushrooms, spinach, mustard greens, asparagus, squash & zucchini w/a tomato based sauce & layers of ricotta cheese mixed w/ Asiago, Pecorino Romano & Parmesan cheese...No pasta! It was sooo good, I ate myself silly then froze the rest. Guess what Im having 4 lunch 2day...I hope it tastes as good as the first day!!!
