A fan requested that I post this again. Im steeping mine on the stove right now. *************** Pine Needle Sorbet Rowan and I made this on a whim yesterday. I couldnt find a recipe, so I invented this one (which is about as hard as making a recipe for grits). The flavor is gorgeous. Far more complex and interesting than I imagined. Im hooked. Pine needle sorbet: 1 C of fresh bright green pine needles 2 C of water 3/4 C of sugar 2 pinches of salt 1 T soy lecithin Wash the pine needles. Put everything except the lecithin in a pot and turn the burner on. Stir until the sugar melts. When it simmers, turn it off, cover the pot, and let it sit for 30 minutes. Strain the pine needles out. Cool the liquid down. Pour it into an ice cream maker and stir in the lecithin. Turn the maker on. Go play with your kids or cats or whatever. You should never do serious work while youre making dessert. Dont get pine needles from a commercial Christmas tree or from the side of the road. Go out in the woods or along the edge of a fallow field. Any pine will do. We used Virginia and loblolly. You could use Douglas fir, Fraser fir (not farmed!), spruces, white pine, hemlock (the tree obviously not the herb), arborvitae (eastern white cedar), BUT NOT YEW.
