A few nights ago, we dipped into a tin of Matiz Españas sardinillas with sweet piquillo peppers. These little guys are hand packed in olive oil and come all the way from the coasts of Galicia - Spains northwestern-most tip! Besides the peppers and olive oil, the only other ingredient augmenting the sardines is salt. The meat of the fish was a lot more fall-apart flaky than expected - totally unlike alici (marinated anchovies - also delicious) which hold together as fillets. The flavor here is savory, dark and rich - the sweet peppers are a perfect counterpoint to the salt and the marvelous deep sea flavor of the fish. Recommended next steps? Heap on crackers. Consume with gusto. And, be sure to have a cold brew or a nice glass of red on hand to swig periodically.
