A friend asked me to post my healthy muffin in a bowl recipe. I know Ive posted in a zillion times, but here it is again: 1 egg, 1 mashed banana, mix well or blend; 1 tablespoon almond flour, pinch of baking soda, pinch of salt, 1 teaspoon cinnamon, dash of ground cloves, dash of ginger, pecans or walnuts as you like. Mix all together in microwavable bowl. Pop in microwave for 1 -1.5 minutes. I have mine with strawberries or peaches. My morning starter! Oh, I sometimes add 1/2 scoop of protein powder or do a whole scoop and dont do the almond flour. Depends on the rigors of the day!
