A fruit enzyme question. I started this kiwi fruit enzyme 9 days ago. I used just the fruit and 1/2 that weight in honey. One blog i read said leave for 7 days, one said 2 - 3 weeks and someone else said a month. For those of you who are more experienced, will you please tell me signs to look for to know when its ready to be strained please? Do I strain when bubbling or wait for bubbles to die down? Also, is it meant to stay quite sweet? Is 1/2 the weight in sugar too much? Appreciate any help you can give and apologise if this has been asked before.
