A great new idea for you. The kids LOVE these. Prepare your favorite pancake batter while your bacon cooks (we use turkey bacon and it works just perfectly) Prepare the griddle by spraying with Pam and preheating slightly. Pour on some pancake batter (about half enough), place a strip of bacon on top and, following the pattern you have made, pour on just enough batter to slightly cover the top of the bacon. Cook as you would any pancake--flip when air bubbles appear. Serve them on a plate with syrup to dip them in and your family/guests will think you are awesome! Cooking for several? Use the double burner griddle!
