A little chili 101 experiment tonight! I fixed a pot of chili the other day in my big ole’ cast iron pot. (no beans) and The Mr. and I enjoyed it for a couple of days.Then we got tired of plain chili and crackers. I thought to myself…Self….what can you do to change it up a bit? I decided to make enchiladas. I drained all the juice that I could from the chili and added some black olives, green chilies, garlic, some more onions and lime juice and simmered it in enchilada sauce (canned) for about 30 minutes. Forgive the Pyrex ;) Admins, please delete if necessary :) Put it in corn tortillas, grated cheddar cheese/Velveeta and a bit of cilantro on top and baked till cheese was melted. Voila! Enchiladas! Served with avocados, homemade salsa and a warm tortilla with butter.
