A new soup I made, hopefully it turns out. Mexican Chicken and Brown Rice -Chicken, anything up to a whole small hen, (I recommend buying one and getting it cut in the supermarket) Does not have to be much if you are not feeding a crowd. I used four leg quarters which was enough for me and mine. -1 can of Rotel -1 can of pinto/black/cannellini beans, drained -Two or three bell peppers, red and yellow preferably -1 white/yellow onion -1 avocado (optional) -Brown Rice, about a 3/4 cup (you can either prepare beforehand and put into the soup/chili thingy or you can stick it dry in the soup as stewing will make it tender.) -Butter or Butterbuds -Cumin, other chicken seasonings that you like and taco seasoning. -Salt to taste Take chicken and season with Cumin, some taco seasoning (be sparing on the latter) Cover chicken with at least an inch or so of water, and add more if you need to as it cooks. Boil in a pot until meat falls off the bone, usually 2 to 3 hours. After the meat separates, Take a large pot that is empty and put it in your sink. Put a colander/strainer on top, and pour in the chicken stock. The chicken should fall right into your strainer, and once it cools you can add the pieces of chicken meat back to your stew. Take your broth and put it back into your hot pot, and back on the stove, on medium-low heat. Wash out your other pot right quick so your dishwasher isnt crowded :P Go ahead and chop up your onion and bell peppers. Add them to the pot to cook. You may add your rice at this point, cooked or not. Cooking time will be longer if rice is not pre-prepared. Your avocado is easy but if you have never eaten one or dont know how to cut one up, use the following link and then add it to the stew. https://youtube/watch?v=O_RaB7Xv54c Add your canned ingredients and turn the heat up to medium. While everything else is cooking, begin sorting out your meat from bone and skin that you cooked. Add that to your soup/stew/whatever :P After you have added your chicken, top with a lid and lower the heat back down to low or medium low, and let it cook under everything is tender.
