A question from Nicholas: I work a privately owned business, we have been through two head chefs in the ten months since weve open. One was an amazing chef the other was a dunce. At this point in time, i have been cooking for almost a decade, i understand most of the aspects of running a restaurant, the owner has come to me asking me and my right hand man to help create a new menu. This seems to be the next step for me into the direction of becoming chef. I would organize and creat a menu, look at food cost, cross reference items to use more than once, but what i would like really help with is should i be getting paid for this or use it as just a learning experience. please help i need help!
