A small, family owned operation that began with native seed in early 2012 is harvesting its first commercial crop this week & Supreme Lobster is proud to introduce this outstanding new Pacific delicacy in its Global Debut! Purple Mountain Oysters are 100% farm raised in the pristine waters off Tekiu Point which is located on the northeastern shore of the Hood Canal. Purple Mountain Oysters begin their life in a hatchery and once the seed are strong enough to survive the elements of the beach are transplanted to “grow-bags” and then suspended across the 9+ acres of tidelands where they feast on algae for a minimum of 12 months until reaching market size. Purple Mountain Oysters achieve their classic shape & deep cups due to the buoy system that gently “tumbles” the oysters as the tide goes in and out. The flavor profile of the Tekiu Point Purple Mountain is outstanding. The meat is full & sweet with light mineral notes and a bold cucumber bouquet up front. The Oysters finish incredible, tapering off with supple, buttery, umami tones accented with an elegant combination of light salinity & melon.
