A very simple dish and made in most homes - Mixed Vegetables - I love to prepare this dish in my own way, pre-preparing all ingredients and then doing the final cooking. A wholesome and a delicious any time dish. Recipe Cauliflower florets (deep fried) 1cup Mushrooms (sliced and sautéed) 1cup Diced Capsicum (sautéed) 1cup Paneer Cubes (deep fried) 1cup Small Potatoes (deep fried) 1cup Diced Carrots (par boiled) 1cup Peas (par boiled) 1cup Garam Masala powder 1tsp For Masala Finely chopped Onions 1cup Finely chopped green chilies 3-4 Ginger Garlic Paste 2-3tsp Finely chopped tomatoes 1cup Degi Mirch 2tsp Coriander Powder 2tsp Turmeric 1tsp Cumin Powder 1tsp Salt to taste Cumin seeds 1tsp Oil as required Green Corander for garnish Method: Firstly, prepare all the vegetables and keep aside. Now take a pan – heat oil and add cumin seeds. Let it crackle and then add finely chopped onions and green chilies. Stir and cook until onions are golden brown in colour. Now add ginger garlic paste and stir for 2-3 minutes. Now add the dry spices along with salt and mix well. Add some water so that spices don’t get burnt. Cook for a couple of minutes – then add chopped tomatoes. Mix well until tomatoes are completely cooked and oil leaves the masala. Now add all the prepared vegetables in this masala and mix with a light hand. Cook for 4-5 minutes, adjust the seasoning, sprinkle garam masala and garnish with coriander. Serve hot.
