AKARA This is a yummy recipe from Sierra Leone. In the classic style of recipes passed down for generations there is no real recipe per se. I have attempted to codify this for your enjoyment. It is somewhat labor intensive, and the process takes a while to get the hang of. This was originally done without a blender. God bless those women. I hate Eurocentric (somewhat racist) designations like the “Paris of the East” to describe Lebanon or Shanghai, but I can’t think of any way to describe akara other than the French fries of Sierra Leone! Just like French fries, they don’t taste that great reheated. If you do reheat, stay away from the microwave – conventional oven only. Please let me know if you decide to make this. Id love to hear how it went. Merry Christmas! 1 cup dried black-eyed peas 1/2 to 1 tsp salt Water Canola Oil can substitute Coconut Oil or Vegetable Shortening Small frying pan Blender 1. Put peas in water so they’re completely covered, soak for 15 minutes 2. Put the peas in the blender a quarter cup at a time 3. Fill the blender approximately ¾ full with water and pulse 2-3 times. 4. Pour into a separate bowl with water, swish with hand, and so the skins separate. Pour the water slowly through a wire mesh strainer, trying to keep the peas at the bottom. The skins will rush out with the water. Add more water, swish with your hands and repeat. Repeat until all the skin and black pieces are gone. Pour the cleaned batch in a separate bowl. Repeat until all the peas are cleaned. **This part is a time consuming hassle, but so worth it!** 5. Put all peeled beans back in the blender. 6. Add a small amount of water and the salt. BE CAREFUL AT THIS PART. THIS IS UNFIXABLE. You are trying to achieve the texture of thick pancake batter. It sucks if you add too much water. 7. Melt enough oil to fill frying pan half way 8. Turn on to medium heat. 9. Once oil is hot scoop the mixture a teaspoonful at a time into the oil. 10. Flip when golden brown. When both sides are brown remove from oil and set on napkin to drain. YUM YUM DELICIOUS!
