ALMOND PARMESAN CRUSTED CHICKEN TENDERS – Chicken prepared this way is moist and delicious, and the almond meal makes this entrée gluten-free. It is one of my favorite ways to eat chicken! INGREDIENTS: 3 tbsp. extra virgin olive oil 1 ½ lbs. chicken 1 cup almond meal/flour ¼ cup parmesan cheese ½ tsp. kosher salt ½ tsp. freshly ground black pepper DIRECTIONS Heat olive oil in a large skillet over medium heat Place almond meal, parmesan cheese, salt, and pepper into a shallow dish, stirring to combine Rinse chicken tenders with water Coat all sides of chicken by firmly pressing strips into the almond meal mixture Place coated chicken strips into hot sauté pan or skillet Cook each side for about 3 minutes, until cooked through and lightly golden brown Remove strips from skillet and let cool slightly on a baking rack or paper towel lined plate Eat plain or serve warm with your favorite chicken strip dip **Feel free to Friend or FOLLOW ME.
