APPLE CINNAMON BREAD( GLUTEN FREE) If you have a lot of apples you don’t know what to do with…. INGREDIENTS: • 2-3 apples, peeled and chopped • 1 tablespoon of maple syrup • 1 cup of almond flour • 3 tablespoons of coconut palm sugar • 1 tablespoon of cinnamon • 1 tsp of ground ginger • ½ tsp baking soda • 2 eggs • ¼ cup coconut oil- melted • ½ cup chopped walnuts(optional) DIRECTIONS: 1. Preheat oven to 350 degrees 2. Grease loaf pan with coconut oil or spray 3. Stir together cut up apples with maple syrup or honey and place in microwave for about 2 minutes. 4. Combine dry ingredients: flour, sugar, baking soda, cinnamon, and ginger 5. In a separate bowl, mix together eggs and oil. 6. Add wet ingredients into dry and slowly stir in apples. I mashed some of the apples after they were softened.7. Pour batter into pan and sprinkle cinnamon on top. Bake for 30-35 minutes.
