ASSISTANT COOK Sherwood Forest Camp Lesterville, MO Reports to: FoodService Manager Position Purpose: To assist the Food Service Manager in providing nutritious, well-prepared meals, and in maintaining the cleanliness and sanitation of the kitchen and dishwashing area. Qualifications: • Experience in high-quality, high-quantity cooking. • Desire to work in the food service area and in a camp setting. • Knowledge of standards of food preparation and serving, storage of food, and kitchen procedures. • Ability to work well with others. • Good character, integrity, adaptability, and enthusiasm. Knowledge, Skills, and Abilities: • Knowledge of current health and safety laws and practices is essential. • Knowledge of and experience in preparation of a variety food and baking items. • Knowledge of food service sanitation. Physical Aspects of the Job: • Ability to lift and carry 50 pounds including unloading food, supplies, and equipment as needed. • Visual and auditory ability to identify and respond to environmental and other hazards of the site and facilities and camper and staff behavior. • Physical ability to operate kitchen equipment according to safe, recommended methods. • Physical mobility and endurance to perform tasks while standing/walking for long periods of time (duration of 60 minutes or more). • Ability to provide first aid and to assist campers and staff in case of an emergency. • Determine cleanliness of dishes, food surfaces, and kitchen area. • Ability to assess condition of food. Essential Job Functions: 1. Assist in the daily operations of the camp’s food service. o Prepare ingredients by washing, peeling, slicing, etc. o Prepare food as the menu indicates utilizing techniques such as frying, boiling, broiling, steaming, and roasting to cook foods such as meat, poultry, seafood, vegetables, salads, soups, and gravies. o Bake breads, pastries, muffins, etc. o Prepare all trays for campers and/or staff who will set each table. o Set up food, supplies, and utensils for dining hall distribution. o Date and store food and leftovers at proper temperature. 2. Assist in routine sanitation of the kitchen and related equipment. o Clean and maintain all food-preparation and storage areas. o Supervise and assist in the cleaning and preparation of dishes and utensils. o Reduce waste, reuse items, and recycle as indicated through the camp’s procedures. 3. Assist in the preparation and packaging of food for use outside the dining hall. o Work with other staff in reviewing “pack out” requests for hiking trips, river trips, and Leadership Training trips to ensure adequate and accurate amounts and variety. o Prepare and store “pack out” food according to camp and health code procedures. o Advise staff on equipment or preparation of materials needed for identified menu choices. 4. Serve as an essential member of the food service team. o Coordinate schedules and job-related tasks with other cooks, food service manager, and kitchen assistants. o Assist with supervising or directing the work of the kitchen assistants. Equipment Used: • Convection oven • Hobart mixer • Hobart dishwasher • Gas ovens, range tops, and griddle Other Job Duties: • Check dining hall and kitchen trash cans and compost containers and empty them when needed. • Sweep floor as needed. • Mop floor at the end of each work day. • Refill all condiment and spice containers at the end of each meal. • Assist in restocking of food and other supplies when they arrive. • Assist in keeping an accurate inventory. • Check and document all refrigerator and freezer temperatures twice a day. • Check and document the Hobart dishwasher’s wash and rinse temperatures twice a day. • Any other duties assigned. Sherwood Forest is a year-round youth development organization with programs uniquely anchored in month-long residential camp experiences. Our camp facility is located in Lesterville, MO (about two hours South of St. Louis). Each summer we serve just over 300 campers and hire approximately 70 staff members. By balancing traditional camp adventures with evidence-based programs that reinforce and support school-year learning, Sherwood Forest connects with, educates, and inspires the youth of St. Louis. A child who begins our programs at the end of first grade has the opportunity to “grow up” with us over the next 9 years, and we are steadfast in our commitment to each and every child. We serve primarily low-income youth, with 80 percent of our campers living at, or below, the federal poverty line as defined by the USDA summer food service program At Sherwood Forest, we believe education and opportunity are rights fundamental to all children. Simply stated, we help kids discover the best in themselves so they can grow up to do good in the world. WHO IS SHERWOOD FOREST’S STAFF? The Sherwood Forest summer staff is made up of approximately 70 people who are hired from all over the United States and the world! Much of the non-summer months are focused on bringing together the strongest staff possible for each summer. We recruit primarily from college campuses and interview most applicants over the phone or via Skype. We work toward a common goal of making the summer a safe, fun and enriching experience for all of our campers. Sherwood Forest attracts people with similar objectives and ideals to come together for a summer to make a difference in the lives of children in need. Staff members have the opportunity to establish many friendships as they live and work closely with other members of the staff. Sherwood Forest’s Kitchen staff are a part of the larger group of Support Staff. In addition to the Support Staff, we also employ about 50 group leaders. WHO IS SHERWOOD FOREST’S KITCHEN STAFF? Sherwood Forest has a Kitchen Manager who plans the menus, orders the food, acts as head cook, and manages the entire food service of the camp. She, along with four assistants, works to create delicious meals for the camp. We serve three meals a day and the cooks are on-hand for the cooking and service of each of these meals. Experience in cooking with large quantities is preferred, but not required. In addition to its cooks, Sherwood Forest’s Counselors-in-training assist with prep work and dish washing. Responsibilities include clean-up and maintenance of the kitchen and dining facilities. WHAT QUALIFICATIONS MUST AN ASSISTANT COOK HAVE TO APPLY? Applicant must be at least 19 years of age. Experience or background education in culinary work and food preparation preferred. We encourage all hardworking, conscientious, responsible, fun and energetic people to apply. We are looking for our staff to work well under pressure and be able to multi-task. They must be friendly, reliable, flexible, and willing to take initiative. Lastly, applicants need to be fun-loving and ready to immerse themselves into camp life! WHAT IS THE SUMMER EMPLOYMENT PERIOD? All staff members are required to work May 14 to August 10, 2015. WHAT IS THE SALARY? The assistant cook salary is competitive based upon education and experience, starting at $1800. There is a travel stipend ranging from $200 - $400 in addition to room and board, AND we are happy to work with you and your school to help you obtain internship credit for your time. WHERE DO THE SUPPORT STAFF LIVE? Support staff members live with campers or other staff in rustic, dormitory style buildings on camp property. By requiring all our staff to live on-site during the summer, a strong sense of community and friendship is developed and enhanced. WHAT ELSE SHOULD I KNOW? We hire both male and female staff. We have about 120 campers and 70 staff on site at a time. Summer programs include three sessions, Mini Camp for first and second grade youth, and Boys Camp and Girls Camp for third through ninth graders. HOW IS THE FOOD AT SHERWOOD FOREST?
