The large charcoal / wood basket and ash pan are removable for easy cleaning and reloading during long cooks. Side walls feature a 1 1/2 false wall that the heat and smoke rise up, then fall down across the meat and out the vents. The very large water pan provides lots of steam keeping the meat moist and tender. The thermodynamics in this cooker keep the meat away from direct heat and provide an incredible natural convection, shortening cook times while providing an amazing product. Three 2 ball valves regulate air intake and two smokestacks with hinged dampers regulate exhaust. Mounted on a recycled boat trailer with a tool box to house charcoal and wood. This is a great backyard unit for the serious bbq nut or potential competition cook. We have won a lot of awards with this cooker, including first place brisket and ribs at the MT state championship in 2013.
