According to one of the presentations happening at the 246th National Meeting & Exposition of the American Chemical Society, cilantro (and possibly its cousins parsley and culantro) could provide readily available and inexpensive alternatives to activated carbon filters and ion-exchange resins for decontaminating large amount of water for drinking and cooking (at least for the parts of the world where these plants are found in large quantities in the wild). The structure of the outer walls of the cells of the plant appears to provide an ideal architecture for the sorption of heavy metals – though we don’t quite know why yet. In fact, according to small-scale experiments, cilantro could actually be a more effective filter than activated carbon for removing heavy metals.
