Added to the Coltello Formaggio selections... from Brattleboro Vermont, Graftons Vermont Leyden. This cave aged cheese is very similar to Gouda in shape (round and flat), but has lower fat percentage, about 30 to 40%. This classic cheese has a big, buttery flavor and texture, brightened with the warmth of cumin seeds. As for pairing this cheese with wine... I would definitely go with a Shiraz... to me, the best bang for the Shiraz buck would be the Penfolds Koonunga Hill Shiraz. This $15 bottle is a rich, ripe shiraz with traditional styling. The Koonunga Hill is pleasantly pungent, with chocolate, plum and prune. The oak is full but not overpowering and humble tannins around a core of five spice and fig newtons, aniseed, biscuit and plum. Now... lets talk about pairing the Leyden with a beer! Porter is the way to go. I choose the Stone Smoked Porter. If you are scared by the word “Smoked” don’t be it’s very light on the palette. Putting this cheese and beer together is the best pairing Ive tasted in quite awhile. They’re perfectly balanced and the undertone smoked flavor of the beer dances on this cumin.
