Afghani aash - Afghani leek ravioli soup. I had been introduced to this by a friend and found the flavours extremely interesting. Afghans have a few versions of this soup in which the accompaniments vary. Some have it with mince and yogurt, others have it with chickpeas or chana daal. I have always had mines with onions and red kidney beans. There are several elements to this soup. You can add vinegar, spices, chutneys and herbs of choice. I had mines with dried and crushed mint leaves powder with a few TSP of olive oil. The mint definitely adds depth of flavour. You can also use veg stock etc. Sounds complicated but once youve got the leek stuffed pasta you can play around with the add ons. Only takes 5-7 minutes of boiling to cook through.
