After a successful dish last night at Stages Projects, our third course fish will be altered.. Last night I was able to poach pollock in sea water at 53*C. The idea; cooking fish in its natural habitat. Its the only species that you can do that with. Pork, beef, rabbit, duck, etc. we pair with what the animal eats. Fish, were doing with what it lives with and cooked in purified sea water. So soft in texture, cooked in an insulating liquid. Gotta love science... See you in the kitchen!
