After purchasing our new water heater I noticed an amazing amount of warning & danger information on the front of the tank. Seeing it was 3 times more than our old 91 Ruud & me...well being me, I spent over 90 mins researching this magic 120 deg temp & why its the standard. Well it comes down to this - its all about legality. Sure, having your water heater at 120 deg will save some energy, but its not significant. This temp was created by government safety standards & lobbyist to avoid scalding and therefore, lawsuits to the big 3 appliance manufacturers. Interestingly, many white-papers as well as the national disease control suggest 135-140 deg to avoid bacterial growth. As cases of legionnaires disease have occurred from water heaters at temps of 115-120 degs. So take this OH SO boring post (if you happened to stick around) as FYI & not hard science. Google it, do some reading & make your own decision as I did as Im going for 137 degrees myself to avoid a 40 gallon petri dish :)
