Ajwaini Murg - I had developed this recipe a year back and it was for the first time that I got excellent results in my first trial of this dish and its very close to my heart. Normally ajwain (carom seeds) is not used in any chicken preparation but this recipe gives a different meaning to the texture and taste of the dish. Very simple to make and delicious at the same time. Hope you enjoy making this. Sharing the recipe as well: Ajwaini Murg Ingredients: 1 chicken (preferably 1kg broiler) - cut into 10 pieces ½ cup curd 2 tsp ajwain 1 tbsp ginger-garlic paste ½ cup coarsely crushed green coriander along with 2 green chilies 100ml cream or malai Salt to taste 1tsp Red Chili powder ½ tsp Turmeric 1 tsp Garam Masala 3 tbsp Ghee 2 whole red chilies Procedure: Marinate the chicken (make gashes on chicken pieces) with curd, 1tsp ajwain, ginger-garlic paste, red chilli powder, turmeric, garam masala powder and salt for an hour or so. Heat ghee in a heavy bottomed pan or kadhai and add the chicken pieces along with the marinade. Cook on medium to high heat stirring continuously for 5-6 minutes. Lower the heat – add crushed coriander and green chilli and mix well - and cover the chicken and cook till tender. Stir in between. Add water if required (preferably avoid water).6. Remove from flame and mix in cream and stir. Adjust seasoning and make a chounk of 1tsp ajwain and 2 red chillies and pour over the chicken. Serve hot.
