All I had written on the menu is meat and veg…lol…so much detail! This is what I came up with, most of the things you see on here I have never made before, I usually have a bunch of ingredients or things to use up and I think “What can I make with this lot!” sometimes I am totally uninspired and sometimes I get creative, and these are the dishes you will usually see on here! Occasionally you will see something boring I must admit, but sometimes boring is just what I needed! This has all my favourite ingredients! We have anti-inflammatory spices, broth and butter…mmmm! I am feeling quite uninflamed right now :) hmmm is that even a word? It was underlined in red so possible not.... Beef, carrot and chia meatballs, with a buttery broth based tomato and oregano sauce. 500g beef mince 3 small carrots, grated 1 tbsp chia seeds Herbamare Mix together well, and form into 12 balls. I was going to put some feta in too, I had it on the bench then forgot to put it in until I saw it was still there after I rolled the balls! Lol The spice based I used is my usual mix of turmeric, ginger, garlic and onion- this one I also added some cumin and coriander seeds, dry fry these 2 until fragrant. Blend up everything with some coconut oil so you get a nice smooth paste. In a large hot pan fry your balls until browned, then add your spice paste, stir in, and then add ½ cup of tomato paste (which I had in the freezer) and then add 500ml broth, also from the freezer. I have used beef but you can use any broth. Simmer for about 20-30 minutes or until the sauce is nice and thick. Take of the heat and add a handful of chopped oregano, you can also use basil, both these herbs are fantastic with tomato. Dice about 50g butter up, you can use more if you want, I don’t think there is such thing as too much butter :) then add to your sauce, stir a little until it’s all melted, Season well with salt. Have served up with steamed broccoli, beans and Asian veg. #forevernutrition #bonebroth #meatballs #turmeric
