All these postings about Eat Local! and Reconnect with your food! are blowing things a little out of proportion. If it werent for companies like Monsanto, many more people would go hungry simply because without the improvements in technology and the science of growing to increase yields, ye olde family owned farm wouldnt be able to keep up with demand and food prices would be even higher than they are now. Companies like Monsanto are why we can even have an argument about whether we should be growing corn to make ethanol to substitute for gasoline(which, BTW, is not a good idea the internal combustion engine, typically speaking, run smoother, cleaner and more efficiently(on the order of 2-4 more MPG) on 100% gasoline than they with ethanol added. But thats a different argument.). Is Monsanto as pure as the wind driven snow? Of course not, but then, no one is. The real culprit for the massive over consumption of processed foods is us because they are fast, easy and generally cheap. But complaining that they put cellulose into some pre-shredded cheese to keep it from re-fusing into a solid block is dumber than a screen door on a submarine. Cellulose is basically a chemical found in the cell walls of pretty much everything green. It is generally undigestible unless you are certain species of ant or a termite, and is thus passed like anything else you cant digest. It is utterly harmless, especially in the quantities found in most products its found in. In fact your favorite shirt, if its 100% cotton, is also 90% cellulose. Education, its a killer sometimes.
