Almond Butter Protein Cookies!!! Ingredients: 1 cup of Almond Butter, 1 Large Egg, 1 Egg white, 2 TBS of unsweetened apple sauce, 1/4 vanilla protein powder, 1 cup of old fashioned oats, 1/2 cup of baking stevia, 1/8 tsp salt, 1 tsp baking soda, 2 TBS of mini chocolate chips... Directions: preheat oven to 350 degrees and line baking sheet with parchment paper and spray with coconut or olive oil. Microwave almond butter for 30 seconds to make it easier to mix. Mix together first 4 (wet) ingredients until smooth. In a separate bowl mix remaining (dry) ingredients and then combine the 2 bowls and mix with HANDS. Roll cookie dough balls onto the baking sheet and flatten with a spoon. Bake for 8-10 minutes! The perfect protein breakfast on the go or snack at the office!
