Aloo Gobi Stir Fry: Ingredients- 1 medium sized cauliflower 3-4 medium sized potatoes 2-3 tbsp oil 1 tsp finely grated ginger 2-3 finely chopped green chillies 1/2 tsp turmeric powder 1/2 asaefotida 1 tsp cumin powder 2 tsp coriander powder 2 tsp red chilli powder (Use as per your liking) Chopped green coriander for garnishing Preparation - Chop the cauliflower into florets and wash them in a little hot water. Wash and dice the potatoes into cubes. Heat oil in a kadhai (preferably non stick) and add the jeera and asafoetida. Add the ginger and green chillies and stir for a minute or so. Then, add the chopped cauliflower and potatoes. Lower the heat to medium and add the dry masalas - turmeric powder, red chilly powder and coriander powder Add the salt as well. Mix well so that the veggies get coated with the masalas properly Cover with a lid cook till the vegetables are half cooked. Then uncover and stir fry on high heat for the last 7-10 minutes. Switch off the heat and add chopped coriander. Mix with light hands and cover with a lid for 2-3 minutes.
