Alriighty fellow foodies: those who know me well know I used to love to cook. Tonight I treated myself. Its been so long since Ive cooked and I quite miss it. Made rare filet mignon and a healthy, exotic egg custard. Of course, wine!! I love egg custard and Ive adapted a recipe to be less sweetly and healthier (honey instead of sugar, then far reduced on the honey even), light coconut cream to coconut milk and further modifications I threw together. It features: - 3 egg yolks (oops youre supposed to have 5) - approx 2 cups coconut milk - 1 tsp vanilla extract - 4 TBSP creamed honey - a sprinkle of red chili flakes - Greek yogurt (3/4 cup) - anise seeds - cardamom - White Raven Chai Tea (a small sampling) - Coconut milk - dusting of nutmeg - whip all together - bake at 400 degrees for 1 hour ish in smaller dishes within a glass pan of water - let cool then refrigerate Possible variations: - sprinkling of fresh lavender - saffron infused coconut milk Simply delicious!
