Alton Browns turkey has never failed me and this year was no exception: free range pasture raised bird, 72 hour brine, 500 degree oven, turkey triangle and then back in at 350 till the probe thermometer goes off at 161 degrees, then out, cover, rest, carve, eat, nap. A good plan. We also had roasted root vegetables, brussles sprouts in bacon, mashed potatoes and my mother brought dressing and corn that she was all over. Other things I made: butter and a dressing made of the included turkey organs, sausage, nuts, raisins, and some liquid and what not. Super good.
