Am having my breakfast with some tasty drop scones ( homemade ) wanna share? Let me give you the method then try make them yourself These tasty and easy to make alternatives to the pancakes are great favorite tea time accompaniment. Like the pancake,they are made with butter and not dough. You can vary the taste by adding a pinch of cinnamon powder to the mixture or you can grate some lemon rind ( the outside of lemon ),or simply add a little lemon juice before you start cooking. They are best served hot so make sure you retain the moisture and heat by wrapping in a tea cloth. INGREDIENTS: ( Makes 18 pieces ) 600ml ( I pint milk ) 340g ( 12oz ) self raising flour 15g ( 1/2oz ) butter 1 egg beaten Pinch of salt 2table spoon caster sugar METHOD 1. Sieve the flour,salt,sugar and the cinnamon (if u decide to use this) together in a mixind bowl. 2. Melt the butter then beat the egg and melted butter together 3. Make a well in the middle of the flour mixture and add the egg and butter slowly to the flour mixture,a little at a time and beating well. Slowly add milk,beating well,to produce a thick creamy batter. The thicker the batter the thicker the drop scone will be. 4. Heat greased heavy frying pan and using a large spoon,drop the batter,at least 25cm ( 2inch ) a part so that there is room for it to spread a little. 5. Make sure it drops not spread all around the bottom as you would with pancake. 6. Cook for 3-4min.over a medium heat until bubbles appear on the surface,turn and cook on the other side until golden brown 7. Place on a warm oven or wrap in a clean dish cloth to keep them warm and set aside 8. Serve hot with butter,jam or honey.
