Vernon MO (I decluttered too much and deleted the notices from my gmail!!). So Im starting a new thread. I got some info from David there about approximate break out, costs, and lead times for both beef and pork. Heres what he said ... -------------- Beef would normally take a month of lead time to get one in age it for 14-21 days and have it ready to pickup...A half beef runs $850- $950. This is the breakdown on a 200# carcass we just had done (appoximately 140# of meat out of the 200# carcass): 74 lbs ground beef 4.5 lbs ribeye steak 6 lb soup bones 10 lb stew meat 21 lb rump,sirloin,chuck and pikes peak roast 8.5 lb t-bone 6 lb sirloin steak 1 lb flank steak 6 lb heart,liver tongue ox tail Pork is available at any time...A half pig is running $275-$300 depending on the weight. Standard cuts appoximately: 15 lbs ham which can have centercut slices and 2 roast 11 lbs bacon 3lbs ribs 15lbs pork chops 17lbs sausage 12 lbs pork steaks 5lb lard -------------------- They also do 1/4 beef at 10 cents more per pound. I broke it out in a spreadsheet to get an idea of per-pound for each type based on a % of their regular prices. I cant attach it, so anyone who wants to see it let me know. For beef, Id take some of all of it. Id only be interested in ribs and pork chops (maybe a little ham) for pig, though.
