Andys Homemade Off-the-Cuff Pumpkin Spice Oatmeal 3 cups original almond milk About 1 tbsp unrefined coconut oil 3/4 cup rolled oats (4 to 1 ratio of liquid to oats = perfect consistency IMO) A few dashes of salt (if I had to guess it was about 1/4 tsp to be exact) About 1/8 tsp vanilla extract 2 tbsp Florida Sun Crystals or similar naturally derived sugar And the crowned prince of oatmeal glory, 1 Tbsp pumpkin spice seasoning This combination of ingredients had Nicole Huffman and me bewildered! I could not believe just how delicious this concoction came out. FWIW: Aside from the oats and almond milk, I did not actually measure any of the ingredients when preparing. This is my best estimate of proportions and I encourage you to make it your own. To prepare I did the following: Heat the almond milk and coconut oil over medium heat until steam begins to lift from the surface. Once slightly steamy, add the oats and vanilla and allow to reach boiling for about 4 minutes, stirring and watching closely to prevent boil-over. Add the salt, sugar, and pumpkin spice and stir for about 2-3 minutes until the pumpkin spice seasoning has dissolved into the oatmeal, providing a beautiful light caramel color. This made two to three great portions for a well rounded energetic start to our day. I hope you all enjoy trying this recipe!
