Anecdote from my Chicago trip: I went into an Irish bar; which apparently was on the edge of an Irish - ish neighborhood, perhaps. There were people speaking with Irish accents and there were authentic totems from Ireland on the wall; ad flyers for an Irish music group, tourist posters, etc. ... I have been in "Irish" bars in Bucharest, Buenos Aires, NYC, D.C., and Baltimore; and they all look alike -- period reproductions of old Guiness or Harp beer advertisements, a certain aesthetic that is as predictable as the same potted plant in a given hotel chain. But I think I was in an authentic Irish bar, there.
